  • 1.5 lbs boneless, skinless chicken thighs, cut into chunks succulent and juicy, these thighs will soak up all the flavors
  • 1 tablespoon olive oil for a smooth and aromatic base
  • 1 medium onion, finely chopped adds a fragrant sweetness
  • 3 cloves garlic, minced enhancing the stew with a robust flavor
  • 1 tablespoon fresh ginger, grated providing a warm, zesty kick
  • 1 large sweet potato, peeled and cubed earthy and tender, enriching the stew's texture
  • 1 can (14 oz) diced tomatoes adding a burst of juiciness
  • 3 cups chicken broth the savory liquid that binds it all together
  • 3/4 cup natural peanut butter creamy and nutty, creating a mouthwatering hub
  • 1 teaspoon ground cumin adding warmth and depth

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 3–4 minutes until soft.
  • Stir in minced garlic and grated ginger, cooking for an additional 30 seconds.
  • Add chicken pieces and cook for 5–6 minutes until lightly browned.
  • Mix in red bell pepper and cubes of sweet potato. Stir, then add diced tomatoes and chicken broth. Bring to a gentle boil.
  • Reduce heat, stir in peanut butter, and add ground cumin, smoked paprika, coriander, cayenne pepper, salt, and black pepper.
  • Simmer uncovered for about 20–25 minutes until sweet potatoes are tender and stew thickens.
  • In the last few minutes, fold in fresh spinach until wilted, then add lime juice and adjust seasoning.
  • Garnish with fresh cilantro before serving, ideally over rice.

Notes

For extra creaminess, substitute some of the chicken broth with coconut milk. For a vegetarian version, replace chicken with chickpeas or tofu. Spice up by experimenting with different types of peppers or adding a hint of cinnamon. Serve with crusty bread or over rice.
