Instructions
 

Preparation

  • In a skillet over medium heat, add the diced apples, light brown sugar, ground cinnamon, lemon juice, and fine salt. Cook for about 5 to 6 minutes until the apples soften, becoming tender and fragrant.
  • Stir in the cornstarch slurry and cook for an additional 30 to 60 seconds until the filling becomes glossy and cohesive.
  • Remove the filling from heat and allow it to cool for at least 10 minutes.
  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Assembly

  • Dip a rice paper wrapper in warm water for 5 to 8 seconds until pliable, then place it on a damp cutting board.
  • Spoon 2 tablespoons of the filling onto the lower third of the wrapper. Fold the bottom over the filling, tuck in the sides, and roll snugly.
  • Brush the tops lightly with neutral oil, then place the rolls seam side down on the prepared baking sheet.

Baking
