Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Blanch the finely chopped broccoli in boiling water for 2-3 minutes, then drain and cool under cold running water.
  • Squeeze out excess water from the broccoli.
  • In a large mixing bowl, combine the broccoli, sharp cheddar cheese, grated Parmesan cheese, breadcrumbs, sour cream, beaten eggs, minced garlic, onion powder, salt, and pepper. Mix well.
  • Roll the mixture into golf ball-sized balls.
  • Line a baking sheet with parchment paper and arrange the balls.

Baking

  • Bake for 20-25 minutes, or until golden brown and crispy.
  • Let cool slightly before serving.

Notes

For extra cheesiness, add more cheddar or a blend of cheeses. To make gluten-free, substitute breadcrumbs with gluten-free options.
