  • 2 cups long-grain parboiled rice Fluffy and aromatic when cooked.
  • 1/4 cup vegetable oil Adds subtle richness.

  • 1 can (14 oz) crushed tomatoes Full of umami flavors.
  • 2 tablespoons tomato paste Enhances savory depth and color.
  • 1 Scotch bonnet or habanero pepper Adjusts heat level.
  • 2 cloves garlic Infuses dish with warmth.
  • 1 teaspoon fresh ginger, grated Adds zesty kick.
  • 2 cups chicken or vegetable stock Envelops rice in warmth.
  • 1 teaspoon dried thyme Softly aromatic.
  • 1 teaspoon curry powder Introduces warm undertones.
  • 1 teaspoon smoked paprika Brings a smoky dimension.
  • 1 bay leaf Infuses subtle complexity.
  • 1 teaspoon salt (adjust to taste) Enhances flavors.
  • 1/2 teaspoon black pepper Provides gentle spice.
  • 1 cup mixed vegetables (optional: carrots, peas, green beans) For added nutrition and color.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Rinse the rice thoroughly in cold water until the water runs clear and set aside.
  • In a blender, combine the red bell pepper, crushed tomatoes, tomato paste, Scotch bonnet pepper, garlic, ginger, and half of the chopped onion. Blend until smooth.

Cooking

  • Heat the vegetable oil in a large oven-safe pot over medium heat. Add the remaining chopped onion and sauté until fragrant.
  • Pour in the blended tomato mixture and cook for 10-15 minutes until it reduces and flavors concentrate.
  • Stir in thyme, curry powder, smoked paprika, bay leaf, salt, and black pepper. Cook for an additional 2 minutes.
  • Add the rinsed rice and stock, stirring to combine. Cover tightly with foil and a lid.
  • Bake for 30-40 minutes until rice is tender and liquid is absorbed.
  • Remove from the oven, stir in mixed vegetables and butter if using. Cover and let steam for 5-10 minutes before serving.

Notes

For richer flavors, consider marinating your protein in the spices before adding it in. You can also add coconut milk or shredded coconut for tropical flavor.
