Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or prepare two 8-inch round pans.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  • In another bowl, cream together the softened butter, sugar, and brown sugar until the mixture is light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and mashed bananas.
  • Mix in the sour cream or yogurt until completely combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in the chopped pecans.

Baking

  • Pour the batter into the prepared pan(s) and bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool completely on a wire rack before frosting.

Frosting (Optional)

  • Beat the cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla, whipping until fluffy.
  • Spread the frosting over the cooled cake and sprinkle with additional pecans.

Notes

Use overripe bananas for the best flavor and moisture. Consider toasting your pecans lightly before adding them to the batter for a heightened nutty flavor.
