Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • In a medium-sized bowl, combine the graham cracker crumbs and melted butter until you achieve a crumbly texture.
  • Press this mixture into the bottom of a 9-inch springform pan to form the crust.
  • Puree 1 cup of fresh blueberries until smooth and set aside.

Mixing the Filling

  • In a large mixing bowl, beat together the softened cream cheese and granulated sugar until smooth and free of lumps.
  • Add in the heavy cream, sour cream, blueberry puree, lavender extract, and vanilla extract; blend until creamy.
  • Add eggs one at a time, mixing well after each addition.
  • Gently fold in the remaining blueberries.

Baking

  • Pour the batter over the graham cracker crust and spread evenly.
  • Bake for approximately 60-70 minutes, or until the center is set with a slight jiggle.
  • Turn off the oven and allow the cheesecake to cool inside with the door slightly ajar for about 1 hour.

Chilling and Serving

  • Transfer the cheesecake to the refrigerator and let it chill for at least 4 hours, preferably overnight.
  • Before serving, garnish with fresh blueberries and edible flowers.

Notes

Ensure cream cheese is at room temperature for a smoother batter. Don’t rush the cooling process to maintain texture. Use other berries or floral extracts as desired. This cheesecake can be stored in the refrigerator for up to 5 days, or freeze for longer storage.
