  • 1 tbsp Worcestershire sauce

For the Creamy Grits

  • 2 cups grits
  • 4 cups water or chicken broth For cooking the grits.
  • 1/2 cup heavy cream For richness.
  • 2 tbsp butter For flavor and creaminess.

  • to taste freshly chopped parsley For garnish.

Instructions
 

Preparation

  • In a large skillet, heat olive oil over medium-high heat. Add the beef tips and sear until browned on all sides (5-7 minutes), then remove and set aside.
  • In the same skillet, add the chopped onion and minced garlic, cooking until soft (2-3 minutes).
  • Add beef broth, Worcestershire sauce, soy sauce, thyme, rosemary, salt, and pepper. Bring to a gentle simmer.

Cooking

  • Return the beef to the skillet, ensuring it is submerged in the broth. Cover and simmer on low for 1.5 to 2 hours until tender.
  • In a saucepan, bring water or broth to a boil. Gradually add grits, stirring continuously. Reduce heat to low, cook for 20-25 minutes.
  • Stir in heavy cream and butter to grits. Season with salt and pepper.

Serving

  • To serve, spoon grits into bowls, top with beef tips and gravy, and garnish with parsley.

Notes

Consider marinating the beef in Worcestershire and soy sauce mixture ahead of cooking for enhanced flavor. For extra creamy grits, substitute some of the water or broth with chicken stock. Adjust spices to taste, adding cayenne pepper for heat if desired.
