  • 1 cup creamy unsalted butter Adds a rich, smooth base
  • 3/4 cup light brown sugar Brings sweetness and hint of molasses
  • 1/3 cup golden syrup Provides sticky sweetness
  • 1/4 teaspoon fine salt Balances the flavors
  • 1 teaspoon vanilla extract Optional aromatic boost
  • 3 1/3 cups rolled oats Provides chewiness

Preparation

  • Preheat your oven to 350°F (180°C) and prepare an 8-inch (20 cm) square baking tin by lining it with parchment paper.
  • In a large saucepan, combine the unsalted butter, light brown sugar, golden syrup, and fine salt. Warm over low heat, stirring often until melted and smooth.
  • Remove from heat. If using, stir in the vanilla extract. Add the rolled oats and mix until fully coated.
  • Transfer the mixture into the prepared tin and press it firmly into an even layer.

Baking

  • Bake in the oven for 18-22 minutes until the edges are golden and the center is slightly soft.
  • Once baked, remove from the oven and let cool for 10 minutes before scoring into 16 bars.
  • Allow to cool completely before lifting out and slicing through the scores for clean edges.

Notes

For extra flavor, consider adding dried fruits like cranberries, nuts for crunch, or chocolate chips before baking. Serve with tea or coffee for a delightful snack.
