For the Spicy Mayo Drizzle

Preparation

  • Preheat the grill to medium-high heat.
  • In a mixing bowl, combine olive oil, lemon juice, lemon zest, grated ginger, minced garlic, honey, soy sauce, salt, and black pepper. Whisk to create a marinade.
  • Coat the chicken breasts in the marinade, massaging it into the meat for an even flavor distribution, and let sit for at least 30 minutes.
  • In another bowl, combine fresh pineapple, mango, red onion, cilantro, lime juice, and a pinch of salt to make the salsa.

Cooking

  • Grill chicken for 6-7 minutes on each side or until cooked through.
  • Serve the grilled chicken topped with the pineapple mango salsa and drizzle with spicy mayo.

Notes

For added depth of flavor, let the chicken marinate for a few hours or overnight. Use a stovetop grill pan or broiler if grilling outdoors isn’t an option. Ensure your grill is clean and preheated for optimal cooking.
