Preparation

  • Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  • In a medium mixing bowl, combine the flour, powdered sugar, and cubed butter. Use a pastry cutter or your fingers to cut the butter into the dry mixture until it resembles coarse crumbs.
  • Press this crumbly mixture firmly into the bottom of the prepared baking pan. Bake for 12–15 minutes or until the crust turns golden brown. Once baked, remove from the oven and allow it to cool.

Filling Preparation

  • In another bowl, beat the softened cream cheese, granulated sugar, egg, and vanilla extract together until smooth and creamy.
  • Spread this luscious mixture evenly over the cooled crust.
  • Spoon the cherry pie filling on top of the cream cheese layer. Gently spread it with a spatula to distribute it evenly.

Baking

  • Bake the assembled squares in the oven for another 20–25 minutes, or until the filling is set and slightly puffed.
  • After baking, allow the dessert to cool completely in the pan.

Finishing Touches

  • Once cooled, sprinkle a handful of chopped pistachios generously on top.
  • For best results, chill the Cherry Pistachio Cream Squares in the refrigerator for at least 2 hours before cutting them into squares.

Notes

For extra flavor, consider using homemade cherry pie filling and lightly toasting the pistachios. Use a warm knife for a clean cut.
