  • 1 packet (2 1/4 teaspoons) instant yeast Ensures your croissants rise beautifully.

Preparation

  • In a large bowl, combine the flour, sugar, and salt. Cut in the chilled butter until the mixture resembles coarse crumbs, with small flecks of butter visible throughout the flour.
  • Dissolve the yeast in the cold water and add it to the flour mixture. Stir until a dough forms, ensuring everything is well incorporated without overworking the mixture.
  • Knead the dough on a floured surface for about 5 minutes. Wrap the kneaded dough in plastic wrap and refrigerate for 30 minutes to chill.
  • Roll out the dough into a large rectangle on a floured surface. Fold it in thirds like a letter, rotate it 90 degrees, and roll it out again. Repeat this rolling and folding process three times, which will create those signature flaky layers.

Shaping & Baking

  • After the final roll, cut the dough into triangles with an approximately 6-inch base.
  • Place chocolate chips at the base of each triangle and roll them up tightly from the base to the tip.
  • Place the rolled croissants on a baking sheet lined with parchment paper. Brush them with the beaten egg to give them a beautiful, golden color. Allow them to rise for 20-30 minutes until puffy.
  • Preheat the oven to 375°F (190°C) and bake the croissants for 15-20 minutes until golden brown.

Notes

To elevate your croissants, consider using high-quality chocolate. Keep the butter cold for a flaky texture. Try adding a sprinkle of sea salt over the finished croissants for a delightful contrast to the sweetness.
