Instructions
 

Preparation

  • Place the potatoes in a large pot and cover them with cold water. Add kosher salt and bring to a boil. Reduce to a simmer and cook for 15-18 minutes until very tender. Drain and return to the pot over low heat for 1 minute to steam off any excess moisture.
  • Pass the potatoes through a ricer into a bowl. Stir in the cubed butter, warm cream, Parmesan, fine salt, pepper, and nutmeg until well combined.
  • Allow the mixture to cool for 3-5 minutes. Then, beat in the egg yolks until the mixture becomes smooth and glossy.

Baking

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Transfer the potato mixture to a piping bag and pipe 12 mounds onto the baking sheet.
  • Brush the tops with the melted butter and bake for 18-22 minutes until golden brown and crispy on the outside.

Serving

  • Garnish with chopped chives and serve warm.
