Cheesecake Layer

  • 16 oz cream cheese softened to room temperature
  • 2 teaspoons cornstarch for structure
  • 1/3 cup granulated sugar to sweeten
  • 1/2 cup whipping cream adds creaminess
  • 3 eggs ensures texture
  • 1 pinch salt
  • 20 drops blue gel food coloring for Cookie Monster hue
  • 15 cookies Oreo cookies crushed

Ganache

  • 3/4 cup semisweet chocolate chips
  • 1/2 cup heavy whipping cream
  • 1 pinch salt

Instructions
 

Preparing the Blondie Base

  • Preheat your oven to 350°F (175°C).
  • In a saucepan, melt together the unsalted butter, salt, and brown sugar. Mix until combined and remove from heat.
  • Allow to cool slightly before stirring in the egg and vanilla extract.
  • Gently mix in the all-purpose flour and mini chocolate chips until well integrated.
  • Spread this mixture evenly in a greased 8-9 inch springform pan.
  • Bake for 15-20 minutes or until the edges are golden and the center is set.

Preparing the Cheesecake Layer

  • While your blondie base is cooling, prepare the cheesecake layer.
  • In a mixing bowl, beat together the cream cheese, cornstarch, granulated sugar, and a pinch of salt until completely smooth.
  • Gradually mix in the whipping cream, blue food coloring, and vanilla extract.
  • Add the eggs one at a time, mixing gently after each addition.
  • Finally, fold in the crushed Oreos and pour this creamy concoction over the cooled blondie base.

Baking the Cheesecake

  • Prepare a water bath: place your springform pan inside a larger baking dish filled with hot water.
  • Place it in the oven and bake at 300°F (150°C) for 60 minutes. The cheesecake will appear slightly jiggly in the center.
  • Once done, turn off the oven and let it cool in there for 1 hour before refrigerating overnight.

Making the Ganache and Serving

  • For the ganache, simply heat chocolate chips, heavy cream, and a pinch of salt in the microwave, stirring until it reaches a smooth consistency.
  • Pour this heavenly mixture over the chilled cheesecake and decorate with any leftover cookie pieces for a charming touch.

Notes
