Cooking Steps

  • Heat olive oil in a large skillet over medium heat. Add chicken sausages and sear until golden brown, about 5-7 minutes.
  • Add minced garlic and cook for 1 minute until fragrant.
  • Stir in the baby spinach and wilt for a couple of minutes.
  • Pour in the heavy cream, add Parmesan cheese, smoked paprika, salt, and pepper. Stir until well combined and cheese is melted.
  • Introduce the drained cannellini beans and simmer for 5-7 minutes to heat through.
  • Return sausages to the pan, spoon sauce over them, and garnish with fresh thyme. Serve immediately with warm, crusty bread.

Notes

For variations, you can substitute chicken sausage with turkey or plant-based sausage, and use other greens such as kale or Swiss chard. A pinch of red pepper flakes adds heat if desired. Best enjoyed fresh, but can be prepared in advance.
