  • 1/4 cup 1/4 cup (60 ml) milk Adjust for batter consistency
  • 1 teaspoon 1 teaspoon of vanilla extract Enhances flavor
  • 1 teaspoon 1 teaspoon of avocado oil or melted butter For crispiness

For Cooking

Instructions
 

Preparation

  • Heat your waffle iron until fully hot, greasing both plates with nonstick spray or a bit of oil.
  • In a blender, combine oat flour, protein powder, baking powder, cinnamon, salt, eggs, cottage cheese, Greek yogurt, milk, vanilla, and oil. Blend until smooth and thick.
  • Let the batter rest for 5 minutes. If too thick, add a splash more milk.

Cooking

  • Spoon the batter into the center of the preheated waffle iron, close the lid, and cook for 4-6 minutes until golden brown and crispy.
  • Transfer the waffles to a cooling rack to maintain crispiness.

Serving

  • Serve warm with fresh berries, Greek yogurt, nut butter, or maple syrup.
