Crockpot French Onion Beefloaf

Ingredients
  

For the Caramelized Onions

  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 teaspoon kosher salt

For the Beefloaf Mixture

  • 2 pounds ground beef (80/20) Preferably for juiciness
  • 1 cup plain breadcrumbs Adds texture
  • 1/3 cup whole milk To bind the mixture
  • 2 large eggs, beaten Also for binding
  • 1 packet dry onion soup mix Infuses deep flavor
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese For cheesy richness
  • 1 cup low-sodium beef broth Moistens the dish
  • 6 slices Swiss cheese To top the loaf
  • 1 tablespoon chopped fresh parsley For garnish, optional

Instructions
 

Preparation

  • Melt the butter in a skillet over medium heat. Add the sliced onions and kosher salt; cook for 15-20 minutes until golden and fragrant.
  • In a large bowl, combine the ground beef, breadcrumbs, whole milk, beaten eggs, onion soup mix, Worcestershire sauce, garlic powder, black pepper, and Parmesan cheese. Mix gently until just combined.
  • Create a foil sling in a slow cooker for easy removal of the beefloaf. Spread half of the caramelized onions on the bottom, then shape the beef mixture into a loaf and place it on top. Pour the beef broth around the loaf and top it with the remaining caramelized onions.

Cooking

  • Cover the slow cooker and cook on low for 4-5 hours or until the internal temperature reaches 160°F (71°C).
  • In the last 10-15 minutes of cooking, place the Swiss cheese slices over the loaf to melt.

Serving

  • Carefully lift the beefloaf out using the foil sling and let it rest for 10 minutes before slicing. Serve with the flavorful onion broth and garnish with parsley if desired.

Notes

Consider adding sautéed mushrooms or a splash of low-sodium soy sauce for extra flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for longer storage.
