  • 0.33 cups granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch dissolved in 2 tbsp water

  • 1.5 cups dark chocolate chips or chopped dark chocolate
  • 0.75 cups heavy cream
  • 1 tsp vanilla extract
  • Extra raspberries (optional for garnish)
  • Extra shaved dark chocolate (optional for garnish)

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch pan with parchment paper.
  • In a large bowl, mix flour, powdered sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  • Press the mixture into the prepared pan and bake for 15-18 minutes until golden brown.

Filling

  • In a saucepan, combine raspberries, granulated sugar, and lemon juice. Cook over medium heat until softened, then add cornstarch slurry and stir until thickened. Set aside to cool.

Ganache

  • For the ganache, heat heavy cream until simmering, then pour over dark chocolate chips. Let sit, then whisk until smooth and stir in vanilla.

Assembly

  • Spread the raspberry mixture over the cooled crust, then pour the ganache on top.
  • Refrigerate for at least 2 hours until set.
  • Cut into squares and garnish with raspberries and shaved chocolate if desired.
