For the Filling

For Assembly

  • 12 unit butter lettuce leaves or romaine lettuce leaves The perfect wraps with a tender crunch.

Preparation

  • In a small bowl, whisk together the soy sauce, honey (or brown sugar), rice vinegar, water, cornstarch, and sesame oil until well combined. Set it aside for later use.

Cooking

  • Heat the avocado oil in a large skillet over medium-high heat. Once the oil is hot, add the ground chicken. Cook for about 5-6 minutes, stirring frequently until the chicken is cooked through and nicely browned.
  • Add the minced garlic, grated ginger, diced red bell pepper, shredded carrots, chopped water chestnuts, and sliced green onions (reserving some for garnish). Sprinkle in the black pepper and cook this aromatic mixture for another 2-3 minutes.
  • Whisk the teriyaki sauce once more to ensure it’s lump-free, then pour it into the skillet. Stir everything together, and let it simmer for about 2-3 minutes until the sauce thickens.

Serving

  • Spoon generous portions of the chicken mixture into fresh lettuce leaves. Top with sesame seeds, the reserved green onions, and Sriracha or chili garlic sauce if desired. Serve immediately.
