Preparation

  • Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
  • Wash the kale leaves under cool running water and dry thoroughly. Remove the stems and tear the leaves into large pieces.
  • In a large bowl, combine the kale leaves with olive oil, garlic powder, Parmesan cheese, salt, black pepper, and lemon zest (if using). Toss to coat evenly.

Baking

  • Spread the seasoned kale in a single layer on the baking sheets, avoiding overcrowding.
  • Bake in the preheated oven for 18-22 minutes, rotating trays halfway through. Remove smaller pieces as they crisp to prevent burning.
  • Let the chips cool for about 5 minutes before serving. Add a pinch of salt if desired.
