Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  • In a mixing bowl, whisk together the eggs, vegetable oil (or melted butter), yogurt, fresh orange juice, orange zest, and vanilla extract until smooth.
  • Gradually add the all-purpose flour, granulated sugar, baking powder, and salt, mixing gently until just combined.
  • Divide the batter among the muffin liners, filling each about three-quarters full.

Baking

  • Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
  • Allow muffins to cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.

Glazing

  • Prepare the glaze by mixing powdered sugar with enough orange juice for a pourable consistency, and drizzle over the cooled muffins.

Notes
