  • 1 lb breakfast sausage juicy and rich in flavor
  • 2 cups frozen diced potatoes or hash brown potatoes thawed
  • 1 medium bell pepper finely diced
  • 1/2 small yellow onion finely diced
  • 1 tablespoon olive oil for a touch of richness
  • 1 teaspoon ground cumin infuses warmth
  • 1/2 teaspoon chili powder for a hint of spice
  • 1/2 teaspoon kosher salt enhances the flavors
  • 1/4 teaspoon black pepper adds depth
  • 12 large eggs for fluffy, protein-packed filling
  • 1/3 cup milk makes the eggs creamy
  • 1 1/2 cups shredded cheddar cheese melty and delicious
  • 8 large burrito-size flour tortillas soft and pillowy
  • 1/2 cup salsa for freshness with each bite

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C). Line a rimmed 13×18-inch sheet pan with parchment paper and lightly grease it for easy cleanup.
  • Spread the sausage across the pan in small pieces, making sure it's evenly distributed. Bake for 10-12 minutes until browned.
  • Stir in the thawed potatoes, diced bell pepper, onion, olive oil, cumin, chili powder, salt, and pepper. Bake for another 8-10 minutes.
  • Reduce the oven temperature to 350°F (175°C). In a large bowl, whisk together the eggs and milk until well combined, then pour the mixture over the sausage filling.
  • Sprinkle shredded cheddar cheese on top, ensuring even coverage.
  • Bake for 14-18 minutes until the center is set. Check for doneness by inserting a toothpick—if it comes out clean, it's done.
  • Let the mixture cool for about 10 minutes, then cut it into 8 rectangles for easy wrapping.
  • Warm the tortillas to make them pliable. Place one egg rectangle in each tortilla with a spoonful of salsa, and roll them up tightly.
  • Serve the burritos warm with additional salsa on the side, or cool and freeze for later.

Notes

For extra flavor, consider adding chopped jalapeños or spinach to the filling. You can substitute cheddar cheese with pepper jack for a spicier version. Using pre-cooked sausage can also speed up the process. Customize toppings with avocado, cilantro, or your favorite hot sauce.
