Preparation

  • Preheat your oven to 375°F (190°C) and grab a 10-inch oven-safe nonstick or cast-iron skillet.
  • In a large bowl, whisk together the eggs, milk, dill, black pepper, and salt until fully blended.
  • Heat olive oil in the skillet over medium heat, add the chopped onion, and cook for 3-4 minutes until softened.
  • Stir in minced garlic and cook for an additional 30 seconds.
  • Add fresh spinach and cook until wilted (about 2 minutes) or warm frozen spinach for 1 minute.
  • Spread the wilted spinach evenly, pour the egg mixture over it, and scatter crumbled feta and parsley on top.
  • Cook on the stovetop for 2-3 minutes until the edges begin to set, then transfer to the oven.
  • Bake for 8-10 minutes until the center is just set and barely jiggles.
  • Let rest for 5 minutes before slicing and serving.

Notes

Feel free to add other vegetables like bell peppers or tomatoes, or even some cooked bacon or smoked salmon for a different twist. The frittata can be made a day in advance and simply reheated before serving.
