Preparation

  • Preheat the oven to 375°F (190°C).
  • Line a baking sheet with parchment paper.
  • In a medium bowl, combine chopped spinach, crumbled feta, cream cheese, garlic powder, salt, and pepper. Mix well.
  • Roll out the puff pastry on a lightly floured surface.
  • Cut the pastry into small squares, approximately 2x2 inches.
  • Place a spoonful of the spinach and feta mixture in the center of each square.
  • Fold the pastry over to form a triangle or rectangle and seal the edges with a fork.
  • Place filled cookies onto the prepared baking sheet and brush the tops with olive oil.

Baking

  • Bake for 15-18 minutes or until golden brown and puffed.
  • Let cool slightly before serving.

Notes

For a flakier texture, ensure puff pastry is cold when handling. Add a pinch of red pepper flakes for heat, or use herbs like dill or parsley for extra flavor. Can be served warm or at room temperature.
