Ingredients
  

For the Steak

  • 6 oz ribeye or strip steak Juicy and tender, offering a rich flavor profile.
  • 1 tbsp olive oil (for searing) Provides a beautiful crust and adds healthy fats.
  • 1 tbsp butter Key player in achieving that velvety garlic butter sauce.
  • 3 cloves garlic, minced Aromatic and fragrant, bringing the garlic butter to life.
  • 1 tbsp fresh parsley, finely chopped A pop of color and freshness.
  • Salt & black pepper to taste Essential seasonings to enhance the steak's natural flavors.
  • Optional: minced garlic or rosemary for basting Adds layers of flavor to the steak.

For the Potatoes

  • 1 lb baby potatoes, halved Creamy on the inside and crispy on the outside when roasted.
  • 2 tbsp olive oil (for potatoes) Helps achieve that perfect golden-brown color.
  • 2 tbsp butter (for potatoes) Fluffy and flavorful, these help elevate the dish.
  • Salt & pepper to taste To season the potatoes beautifully.
  • 1 tbsp grated parmesan (optional) For an indulgent, cheesy touch.

Instructions
 

Preparation

  • Preheat your oven to 425°F.
  • Toss the halved baby potatoes in a bowl with 2 tbsp olive oil, salt, and pepper, ensuring they are evenly coated.
  • Spread them on a baking sheet and roast for 25–30 minutes, flipping halfway through for an even golden-brown finish.

Making Garlic Butter

  • Melt 1 tbsp butter in a pan over medium heat.
  • Add the minced garlic and sauté until fragrant.
  • Stir in the chopped parsley and reserve to pour over the roasted potatoes in the final minutes of cooking.

Cooking the Steak

  • While the potatoes are roasting, season the steak with salt and pepper.
  • Heat a skillet over high heat and add 1 tbsp olive oil.
  • Sear the steak for 3–4 minutes per side to achieve a beautiful crust.
  • In the last minute of cooking, add butter and optionally some minced garlic or rosemary to baste for an extra layer of flavor.
  • Let the steak rest for 5–7 minutes before slicing against the grain.

Assembly

  • Plate the crispy potatoes alongside the sliced steak, drizzling any leftover garlic butter or pan juices over the steak.

Notes

For best results, choose a well-marbled steak. Don't skip the resting period for juicy results. You can double the potatoes or steak for meal prep.
