  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika Adds a smoky flavor.
  • 2 tbsp olive oil For searing the steak.
  • 3 tbsp unsalted butter Creates a rich base.
  • 4 cloves garlic, minced Enhances flavor.

For the Pasta

  • 12 oz rotini or fusilli pasta Choose preferred shape.
  • 1 cup heavy cream Adds creaminess.
  • 1-2 tbsp Cajun seasoning Adjust for heat preference.
  • 0.5 cup freshly grated Parmesan cheese For rich flavor.
  • 1/2 tsp red pepper flakes (optional) For added heat.
  • 2 tbsp fresh parsley, chopped For garnish.

Instructions

Preparation

  • Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
  • Pat the steak cubes dry with a paper towel and season them with kosher salt, black pepper, garlic powder, and smoked paprika.

Cooking

  • In a large skillet, heat olive oil over medium-high heat and add the seasoned steak cubes. Sear for 2 to 3 minutes until browned, then transfer to a plate.
  • Reduce heat to medium and melt the butter in the skillet. Add minced garlic and sauté for 30 to 60 seconds until fragrant.
  • Pour in the heavy cream while scraping the browned bits from the skillet. Stir in Cajun seasoning and a bit more garlic powder. Simmer for 3 to 4 minutes until thickened, then add Parmesan cheese.
  • Add the drained pasta to the sauce, mixing well. If too thick, add reserved pasta water gradually. Fold in the seared steak until warmed through.

Finishing Touches

  • Garnish with parsley and additional Parmesan before serving. Enjoy hot!

Notes

For added flavor, marinate steak in garlic and olive oil for a few hours. For a richer sauce, add chicken broth while simmering the cream. A squeeze of lemon juice before serving can brighten the dish.
