For the Steak

  • 1.25 lb sirloin steak, cut into 1-inch pieces Choose high-quality sirloin steak for juicy tenderness.

For the Pasta

  • 12 oz rigatoni or penne Holds onto sauce beautifully.
  • 1 cup heavy cream Creates a creamy texture.
  • 0.75 cup freshly grated parmesan cheese Offers a rich, nutty flavor.
  • 0.5 cup reserved pasta water Helps adjust sauce consistency.
  • 0.5 tsp Italian seasoning Adds herbal freshness.
  • 0.25 tsp red pepper flakes Optional for those who enjoy heat.
  • 2 tbsp chopped fresh parsley Adds freshness and color.

Instructions
 

Prepare the Pasta

  • Bring a large pot of salted water to a rolling boil. Add the rigatoni or penne and cook until al dente according to package instructions. Reserve 1 cup of pasta water before draining.

Cook the Steak

  • Pat the steak pieces dry with paper towels and season them with kosher salt and black pepper.
  • Heat olive oil in a large skillet over medium-high heat. Sear the steak for 2-3 minutes on each side until browned.
  • Lower heat, add butter and garlic, and toss steak pieces for about 1 minute until garlic is fragrant. Transfer to a plate.

Make the Sauce

  • In the same skillet, melt 1 tablespoon of butter and pour in heavy cream. Scrape up browned bits and let it simmer for 2-3 minutes.
  • Stir in parmesan cheese, Italian seasoning, and optional red pepper flakes until smooth.

Combine and Serve

  • Toss the drained pasta and reserved pasta water into the sauce, mixing until coated.
  • Return the steak and juices to the skillet, mixing everything together and adjusting seasoning with salt and pepper.
  • Sprinkle with fresh parsley before serving and enjoy immediately.

Notes

For an extra flavor boost, add a splash of lemon juice before serving. Experiment with different pasta shapes or sautéed vegetables for added texture and flavor.
