Ingredients

Cupcake Base

  • 1 cup all-purpose flour soft and airy, providing the perfect base for your cupcakes.
  • 1 cup granulated sugar sweet and satisfying, bringing out the rich chocolate flavors.
  • 1/2 cup unsweetened cocoa powder deep, dark, and aromatic, adding essential chocolatey goodness.
  • 1/2 teaspoon baking soda helps your cupcakes rise to fluffy perfection.
  • 1/2 teaspoon baking powder ensures a light texture that makes each bite melt in your mouth.
  • 1/4 teaspoon salt balances the sweetness for a well-rounded flavor.
  • 1/2 cup unsalted butter, softened creamy and rich, adding moisture to your batter.
  • 2 large eggs providing structure and richness to your cupcakes.
  • 1 teaspoon vanilla extract aromatic and warm, enhancing the overall flavor profile.
  • 1/2 cup buttermilk brings moisture and a slight tang that complements the sweetness.

Topping

  • 1 cup caramel frosting ooey gooey and perfect for drizzling.
  • 1/2 cup shredded coconut toasty and chewy, adding texture and flavor.
  • 1/2 cup chopped pecans crunchy and nutty, for delightful contrast in every bite.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  • In a large mixing bowl, combine the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking soda, baking powder, and salt. Mix thoroughly.
  • In another bowl, beat the softened unsalted butter until creamy. Add eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla extract.
  • Alternately add the dry ingredients and buttermilk to the butter mixture, starting and ending with dry ingredients.
  • Fill the cupcake liners halfway with batter for even baking.

Baking

  • Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  • While the cupcakes bake, prepare the frosting by mixing caramel frosting with shredded coconut and chopped pecans.

Frosting

  • Once the cupcakes are cooled, frost them generously with the caramel mixture.

Notes

For added moisture, do not overmix the batter; a few lumps are fine. For a richer taste, use dark chocolate cocoa powder. Toast the coconut and pecans lightly before adding them to the frosting for enhanced flavor.
