Instructions
 

Make the Vanilla Cream Syrup

  • In a medium saucepan, combine sugar, butter, heavy whipping cream, and a pinch of salt.
  • Cook over medium heat, stirring constantly until it begins to bubble.
  • Allow to boil gently for 3-5 minutes, then remove from heat.
  • Stir in vanilla extract and baking soda, and set aside to cool.

Prepare the Waffle Batter

  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
  • In another bowl, whisk the egg yolks until smooth, then mix in the vegetable oil, milk, yogurt, and molasses.
  • In a separate bowl, beat the egg whites until stiff peaks form.
  • Gently stir the wet ingredients into the dry ingredient mixture.
  • Carefully fold in the beaten egg whites.

Cook the Waffles

  • Preheat and grease your waffle iron.
  • Pour batter into the preheated waffle iron according to manufacturer's instructions.
  • Cook for about 3-5 minutes until waffles are golden brown.
  • If making multiple batches, keep waffles warm in a low oven.
