Mushroom Filling

  • 8 ounces sliced cremini mushrooms For an earthy depth.
  • 1 tablespoon olive oil

  • 1 teaspoon fine salt
  • 1 teaspoon black pepper

Sandwich Assembly

  • 4 slices sourdough bread Provides a slightly tangy backdrop.
  • 3 ounces Gruyere cheese For a gooey filling.
  • 3 ounces Fontina cheese For a creamy texture.
  • 2 tablespoons Dijon mustard Adds zing and acts as an adhesive.
  • 1 tablespoon softened butter Coat the outside of the bread for a crispy crust.

Preparation

  • In a large skillet, heat the olive oil and 1 tablespoon of unsalted butter over medium-high heat.
  • Add the sliced cremini mushrooms and cook for 8-10 minutes until browned.
  • Stir in the minced garlic, thyme, salt, and black pepper. Cook for 1 minute, then add lemon juice. Set mushrooms aside to cool slightly.

Assembly

  • Butter one side of each slice of sourdough bread.
  • On the unbuttered side of two slices, spread Dijon mustard, coating it well.
  • Layer half of the shredded Gruyere and Fontina cheeses, the sautéed mushrooms, and the remaining cheese on the mustard-coated sides of the bread.
  • Close the sandwiches with the buttered sides facing out.

Cooking

  • Cook the sandwiches in the skillet over medium-low heat for 3-4 minutes per side, pressing gently until golden brown and the cheese melts.
  • Let the sandwiches rest for a minute before slicing and serving warm.

Notes

For an even richer flavor, consider adding smoked paprika or red pepper flakes to the mushrooms. Use a sandwich press for extra crispiness.
