Instructions
 

Preparation

  • Preheat your grill to medium-high heat (around 400°F / 200°C). Lightly oil the grill grates to prevent sticking.
  • In a small bowl, mix the olive oil, garlic powder, smoked paprika, salt, pepper, and chili powder to create a flavorful marinade.
  • Brush the seasoned oil mixture generously on both sides of the chicken breasts.

Grilling

  • Grill the chicken for about 5–6 minutes on each side until the internal temperature reaches 165°F (75°C).
  • During the last 2 minutes of grilling, add the shredded Monterey Jack cheese on top of each piece of chicken and close the grill lid.
  • Once cooked, remove the chicken from the grill and let it rest for about 5 minutes.

Serving

  • Top the grilled chicken with sliced avocado, halved cherry tomatoes, fresh cilantro, and a squeeze of lime juice before serving.

Notes

Consider marinating the chicken for at least 30 minutes or overnight to enhance flavor. For extra smokiness, add some wood chips to your grill.
