  • 1.5 lb boneless skinless chicken thighs, cut into 1-inch pieces
  • 1 each red bell pepper, cut into 1-inch pieces
  • 1 each green bell pepper, cut into 1-inch pieces
  • 1 small red onion, cut into wedges
  • 1 medium zucchini, cut into thick half-moons
  • 2 cups fresh pineapple chunks (or well-drained canned chunks)

Sauce Ingredients

  • 1 tbsp olive oil
  • 1 tbsp sesame seeds (optional)
  • 2 tbsp chopped cilantro (optional)
  • 1/3 cup pineapple juice
  • 3 tbsp gluten-free tamari or low-sodium soy sauce
  • 2 tbsp ketchup
  • 2 tbsp honey or packed brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 3 cloves garlic, minced
  • 2 tsp freshly grated ginger
  • 1 tbsp cornstarch
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • A pinch of red pepper flakes (optional)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Line a large rimmed sheet pan with parchment paper or foil and lightly coat with olive oil.
  • In a mixing bowl, whisk together pineapple juice, tamari, ketchup, honey, rice vinegar, sesame oil, garlic, ginger, cornstarch, salt, pepper, and red pepper flakes until smooth.
  • Place chicken, bell peppers, red onion, and zucchini onto the prepared sheet pan. Pour about three-quarters of the glaze over the top and toss to coat.

Cooking

  • Spread everything out in a single layer and roast for 15 minutes.
  • Remove from the oven, stir gently, scatter pineapple chunks over the top, and brush with remaining glaze. Return to the oven for 8 to 10 minutes until the chicken is cooked to an internal temperature of 165°F.
  • Toss everything once on the hot pan to coat with glaze. Sprinkle with green onions, sesame seeds, and cilantro before serving.

Serving

  • Serve warm over rice or in lettuce wraps.

Notes

Use fresh, high-quality ingredients and feel free to customize vegetables. Marinating the chicken in the glaze for a few hours can enhance the flavor.
