  • 2 tablespoons olive oil providing a rich and fruity base

  • 4 cups low-sodium beef broth essential for a flavorful stew
  • 3 medium potatoes, peeled and diced bringing creamy heartiness
  • 1 cup celery, chopped adding a refreshing crunch
  • 1 cup frozen peas for color and sweetness
  • 1 teaspoon dried thyme offering an earthy herbal note
  • 1 leaf bay leaf for warmth and complexity
  • to taste salt and pepper enhancing flavors
  • 1 tablespoon cornstarch (optional for thickening) for a luscious finish

Instructions
 

Preparation

  • In a large pot or Dutch oven, heat olive oil over medium heat. Add the beef stew meat and brown on all sides, then remove and set aside.
  • In the same pot, sauté onion and garlic for 2-3 minutes until softened and aromatic.

Cooking

  • Return beef to the pot and add beef broth, carrots, potatoes, celery, thyme, bay leaf, salt, and pepper. Stir to combine and bring to a gentle boil.
  • Reduce heat to low, cover, and let simmer for 1 to 1.5 hours, stirring occasionally.
  • Optional: If desired, mix cornstarch with a splash of cold water and add to the stew, cooking for a few more minutes.
  • About 5 minutes before serving, stir in the frozen peas.
  • Remove bay leaf before serving and enjoy hot.

Notes

For richer flavor, marinate the beef in garlic, thyme, and low-sodium broth a few hours before cooking. Additional vegetables like bell peppers, turnips, or mushrooms can be added. Slow cooking enhances the flavors; consider using a slow cooker for best results.
