Preparation

  • Rinse the rice in a fine-mesh strainer until the water runs mostly clear. Set aside to drain.
  • Heat olive oil in a Dutch oven or deep skillet over medium-high heat. Add ground beef and cook for 7-9 minutes until browned.
  • Add diced onion, green bell pepper, celery, and a pinch of salt; cook for 5-6 minutes until softened.
  • Stir in minced garlic, tomato paste, Cajun seasoning, smoked paprika, thyme, cayenne, and black pepper; cook for 1 minute.
  • Add rinsed rice, beef broth, and bay leaf. Bring to a boil, then cover, reduce heat to low, and simmer for 18-20 minutes.
  • Turn off heat and let sit covered for 10 minutes. Remove bay leaf and fluff rice with a fork. Stir in green onions and parsley. Adjust seasoning before serving.
  • Serve with hot sauce if desired.

Notes

For extra flavor, brown the ground beef in batches and let the vegetables soften well. Consider adding more vegetables like carrots or peas for nutrition. Always taste before serving to adjust seasonings.
