Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Prepare two 8-inch cake pans by lining the bottoms with parchment paper.
  • In a mixing bowl, combine the finely ground pistachios, all-purpose flour, baking powder, and salt. Whisk together until mixed.
  • Beat eggs, granulated sugar, and vanilla extract in another bowl until pale and doubled in size.
  • Gently fold in the dry ingredients and melted butter into the egg mixture without over-mixing.

Baking

  • Divide the batter evenly between the prepared pans. Bake for about 25 minutes or until a toothpick comes out clean.
  • Let the cakes cool before removing from the pans.

Raspberry Gelée

  • Blend fresh raspberries with sugar and lemon juice until smooth, strain to remove seeds.
  • Heat with gelatin until fully dissolved.

Frosting and Glazing

  • Beat softened cream cheese and butter until smooth, then gradually add powdered sugar and vanilla extract.
  • Spread raspberry gelée on one cake layer, frost with cream cheese mixture, place second layer on top and frost the entire cake.
  • Heat sugar, water, and gelatin in a saucepan until dissolved, mix in condensed milk and chocolate chips until smooth.
  • Add food coloring, cool slightly, and glaze the cake.

Serving

  • Chill the cake to let the glaze set. Garnish with fresh raspberries, pistachios, and edible gold leaf before serving.

Notes

Use room temperature ingredients for better mixing, and strain the gelée to remove seeds for a refined finish. Work quickly with gelée and frosting for better layers.
