Ingredients
  

For the filling

  • 1 lb lean turkey breakfast sausage Provides a hearty base.
  • 1 teaspoon olive oil For richness.

  • 3/4 cup cottage cheese Provides creamy texture.

  • 8 large high-protein burrito-size flour tortillas To wrap the filling.
  • 1 cup shredded cheddar cheese For cheesy delight.

Instructions
 

Cooking the Filling

  • Brown the turkey sausage in a large nonstick skillet over medium heat, breaking it into small crumbles until no pink remains (about 5-7 minutes). Transfer to a plate.
  • If needed, add olive oil to the skillet. Add the diced bell pepper and onion, sauté for 4-5 minutes until softened.
  • Stir in baby spinach and black beans until the spinach wilts.
  • In a separate bowl, whisk together eggs, egg whites, cottage cheese, salt, and pepper until mostly smooth.
  • Lower heat to medium-low and pour the egg mixture into the skillet with vegetables. Stir gently for 4-6 minutes until eggs are just set. Fold cooked turkey sausage back in.

Assembling the Burritos

  • Spread filling on a sheet pan to cool for 10 minutes. Warm tortillas to make them pliable.
  • Divide filling among tortillas, sprinkle with cheddar cheese, fold and roll them up.
  • Toast rolled burritos in a dry skillet seam side down for 1-2 minutes per side until golden brown.
  • Serve with salsa, avocado, or Greek yogurt.

Notes

Consider adding diced jalapeños for a spicy kick or incorporating different vegetables. Using fresh herbs can add brightness, and swapping the cheese can change the flavor profile. Allow the filling to cool to prevent tearing tortillas.
