Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Sauté the chopped onion and minced garlic for 2-3 minutes until softened.
  • Add the sliced mushrooms and cook for another 5 minutes until caramelized.
  • Stir in the chopped spinach and cook until just wilted. Remove from heat.
  • In a saucepan, combine heavy cream and vegetable broth. Bring to a simmer, adding oregano, salt, and pepper. Cook for 5 minutes until slightly thickened.

Assembly and Baking

  • In a baking dish, layer the cooked noodles, mushroom-spinach mixture, ricotta cheese, and creamy sauce. Repeat until all ingredients are used, finishing with sauce on top.
  • Sprinkle mozzarella and Parmesan over the top.
  • Bake for 30-35 minutes until golden and bubbly.
  • Allow the lasagna to cool for 10 minutes before serving. Garnish with fresh parsley.

Notes

Consider experimenting with different mushrooms or adding nutmeg to the ricotta mixture for extra flavor. Let the lasagna rest after baking to maintain its layers when sliced.
