Preparation

  • Heat olive oil in a large skillet over medium heat until shimmering.
  • Add the finely chopped onion and sauté until translucent, about 3–4 minutes.
  • Stir in the minced garlic and red pepper flakes, cooking for about 30 seconds.
  • Pour in the crushed tomatoes, salt, black pepper, oregano, and smoked paprika. Stir well and let the mixture simmer uncovered for 8–10 minutes.
  • Make small wells in the sauce and carefully crack the eggs into each well. Cover and cook for 5–7 minutes.
  • Remove from heat and garnish with freshly chopped parsley or basil and grated Parmesan cheese.

Serving

  • Serve immediately with crusty bread, allowing diners to scoop up the savory sauce and eggs.

Notes

For the best results, use fresh eggs and taste the sauce before adding the eggs to adjust seasoning. Adjust cook time for firmer yolks if preferred.
