  • 1 cup unsweetened shredded coconut Adds chewy texture and natural sweetness.
  • ½ cup blanched almond flour Provides creaminess and nutty flavor.
  • 2 tablespoons pure maple syrup For sweetness.
  • 1 tablespoon melted coconut oil Adds richness.
  • 1 tablespoon matcha green tea powder Gives the unique earthy flavor.
  • a pinch fine salt Enhances flavors.
  • 1 tablespoon vanilla extract For flavor.
  • 2 tablespoons shredded coconut (for rolling) To roll the bites.

Preparation

  • Add the shredded coconut, almond flour, matcha powder, and fine salt into a food processor. Pulse the mixture 5-6 times until combined.
  • Pour in the maple syrup, melted coconut oil, and vanilla extract. Process the mixture for 20-30 seconds until it becomes damp and holds together.
  • If the mixture comes out crumbly, adjust the consistency by adding more maple syrup, one teaspoon at a time. If it feels too sticky, add a bit more almond flour.
  • Scoop small portions of the mixture and roll them into balls to create about 10 bites. Roll each ball in the extra shredded coconut to coat it.
  • Enjoy the bites immediately for a softer texture, or refrigerate for about 15 minutes for a firmer consistency.

Notes

For added flavor, consider adding chia seeds, hemp seeds, or a pinch of cinnamon. If you dislike coconut, substitute with ground walnuts or pecans. Store in an airtight container in the fridge for up to a week or freeze for longer storage with parchment paper in between layers.
