Instructions
 

Preparation

  • Preheat your oven to 400°F and line a baking sheet with parchment paper.
  • Place the salmon fillets skin-side down on the lined baking sheet. Season with salt, pepper, and lemon juice.
  • Spoon basil pesto over each fillet.
  • Top the fillets with spinach, sun-dried tomatoes, red onion, and feta cheese. Drizzle with olive oil.
  • Bake for 15-18 minutes until the salmon flakes easily with a fork.
  • Garnish with fresh herbs if desired and serve.

Notes

Fresh vs. frozen salmon can be used. Feel free to mix in other vegetables like zucchini or bell peppers. Marinating the salmon in lemon juice and pesto for an hour can enhance the flavor.
