Ingredients
  

For the roasted cauliflower

  • 1 large head cauliflower, cut into tender, bite-sized florets
  • 3 tablespoons olive oil For rich aroma

For the tahini-honey sauce

  • 1/4 cup tahini Offers a creamy texture
  • 2 tablespoons honey Adds a touch of sweetness
  • 1 tablespoon fresh lemon juice Adds refreshing brightness
  • 1 small clove garlic, minced Provides depth
  • 2–3 tablespoons warm water To adjust sauce consistency

For garnish

  • 2 tablespoons fresh parsley, chopped For a pop of color
  • 1 tablespoon toasted sesame seeds Optional, for nutty crunch

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, toss the cauliflower florets with olive oil, ground cumin, smoked paprika, turmeric, ground coriander, cayenne (if using), salt, and black pepper until thoroughly coated.

Roasting

  • Spread the seasoned cauliflower on the prepared baking sheet in a single layer.
  • Roast for 25–30 minutes, tossing halfway through, until tender and golden.

Sauce Preparation

  • While the cauliflower is roasting, prepare the tahini-honey sauce by whisking together tahini, honey, fresh lemon juice, minced garlic, and warm water until smooth.
  • Adjust with more water for desired consistency; the sauce should be creamy yet pourable.

Serving

  • Transfer the roasted cauliflower to a serving platter and drizzle with the tahini-honey sauce.
  • Garnish with chopped fresh parsley and toasted sesame seeds before serving warm.

Notes

Consider adding a pinch of cinnamon for extra flavor. You can also roast the cauliflower longer for a crisper texture. This dish can be made vegan by using maple syrup instead of honey.
