Instructions
 

Preparation and Cooking

  • Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil.
  • Once hot, add the thinly sliced beef and cook for about 3-4 minutes until browned and cooked through. Remove beef and set aside.
  • In the same skillet, add the remaining tablespoon of vegetable oil along with sesame oil. Toss in chopped onion and minced garlic, sautéing until the onion is translucent (about 2-3 minutes).
  • Push the onions and garlic to one side, then pour the beaten eggs into the empty side of the skillet and scramble until fully cooked.
  • Add cooked rice, breaking up clumps, and stir to coat with the oil, eggs, and vegetables.
  • Reintroduce the cooked beef and add soy sauce and oyster sauce (if using). Stir to combine, and if using, add frozen peas and carrots.
  • Cook for an additional 3-4 minutes, mixing occasionally.
  • Season with salt and pepper to taste, then garnish with chopped green onions before serving.

Notes

To enhance the flavor, consider marinating the beef in soy sauce, garlic, and ginger for at least 30 minutes. Fresh rice tends to be moist, use day-old rice for best texture. Serving suggestions include pairing with a light Asian salad, steamed vegetables, sliced fresh chili or chili sauce.
