Ingredients
  

Crust

  • 1.5 cups crushed graham crackers For a crunchy base.
  • 1/3 cup unsalted butter, melted
  • 1/4 cup sugar To sweeten the crust.

Filling

  • 16 oz cream cheese, softened Must be at room temperature.
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract For flavor.
  • 2 large eggs Add one at a time.

Fruit Layers

  • 1 cup raspberry compote For the top layer.
  • 1/2 cup peach compote For the middle layer.

Garnish

  • to taste whipped cream For topping.
  • to taste fresh berries For decoration.
  • to taste mint leaves For freshness.

Instructions
 

Preparation of Crust

  • Combine the crushed graham cracker crumbs, melted butter, and sugar in a mixing bowl.
  • Press this mixture firmly into the bottom of a 9-inch springform pan.
  • Chill the crust in the refrigerator for about 30 minutes.

Cream Cheese Layer

  • Beat the softened cream cheese with granulated sugar and vanilla extract until smooth and creamy.
  • Incorporate the eggs one at a time, mixing well after each addition.
  • Pour half of this cream cheese mixture over the chilled crust.

Fruit Compote Layer

  • Spoon the peach compote onto the cream cheese layer, followed by the raspberry compote.
  • Pour the remaining cream cheese mixture on top.

Baking

  • Preheat your oven to 325°F (165°C).
  • Place the springform pan in the oven and bake for 45-50 minutes.
  • The cheesecake is done when the center is slightly jiggly.
  • Allow the cheesecake to cool completely at room temperature.

Chill and Serve

  • Refrigerate the cheesecake for at least 4 hours or overnight.
  • Top each slice with whipped cream, fresh berries, and mint leaves before serving.

Notes

For cream cheese, allow it to soften at room temperature. Consider adding sour cream for richness. Homemade fruit compotes enhance flavor but store-bought works fine. Chill overnight for a firmer texture.
