Instructions
 

Make the Pecan Filling

  • Melt the butter, corn syrup, and brown sugar in a saucepan over medium heat until smooth.
  • Whisk in the egg quickly to prevent curdling.
  • Stir in the vanilla extract and chopped pecans.
  • Transfer to a bowl and chill in the refrigerator until firm.

Bake the Brownies

  • Preheat oven to 175°C / 350°F.
  • In a heatproof bowl, melt the unsalted butter and dark chocolate until smooth.
  • Incorporate granulated sugar, whisking well.
  • Add eggs one at a time, followed by the vanilla extract, blending thoroughly.
  • Sift flour, cocoa powder, and salt into the batter, folding gently.
  • Pour brownie batter into a prepared baking pan and bake for 20-25 minutes until a toothpick comes out with a few moist crumbs.
  • Allow brownies to cool completely.

Make the Brownie Truffle Dough

  • Crumble cooled brownies into a mixing bowl and combine with softened cream cheese until mixed.
  • Form small balls around frozen pecan filling, ensuring a seamless outer layer.
  • Place truffle bombs back into the fridge to chill.

Dip in Chocolate

  • Melt remaining good-quality chocolate until smooth.
  • Dip each brownie bomb into the melted chocolate until fully coated.
  • Sprinkle sea salt flakes or additional chopped pecans on top before chocolate hardens.
  • Allow to set on a lined baking sheet.
