Ingredients

  • 4 tablespoons unsalted butter, melted Binds the cookie crust.

For the ice cream layers

  • 1.5 quarts peppermint ice cream, softened slightly Brings the refreshing flavor.
  • 1.5 quarts vanilla or chocolate ice cream, softened slightly Choose according to preference.
  • 1 cup crushed peppermint candies or candy canes (optional) For added peppermint flavor and crunch.
  • 1/2 cup mini chocolate chips or chocolate shavings (optional) For extra texture and chocolatey goodness.

For the whipped topping

  • 1.5 cups heavy whipping cream To be whipped into a fluffy topping.
  • 2 tablespoons powdered sugar Sweetens the whipped cream.
  • 1/2 teaspoon vanilla extract Enhances the flavor.

For garnish

  • Crushed peppermint or chocolate curls For visual appeal.

Instructions
 

Make the Crust

  • Crush the chocolate sandwich cookies into fine crumbs. Mix with melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan and freeze for 15-20 minutes to set.

First Ice Cream Layer

  • Spread the softened peppermint ice cream evenly over the crust. Sprinkle with crushed peppermint candies if desired. Freeze for 30-45 minutes.

Second Ice Cream Layer

  • Spread the softened vanilla or chocolate ice cream over the peppermint layer. Freeze for at least 4 hours or overnight.

Make Whipped Topping

  • Whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Garnish & Serve

  • Spread or pipe the whipped cream over the cake. Garnish with crushed peppermint or chocolate curls and let sit at room temperature for 10-15 minutes before slicing.

Notes

Use quality ice cream for best flavor. Chill your mixing bowl and beaters before whipping the cream. Experiment with different ice cream flavors or add layers of fudge or fruit.
