Making Raspberry Sauce

  • In a small saucepan, combine raspberries, sugar, and lemon juice over medium heat. Stir and mash until the berries break down, creating a colorful and fragrant sauce.
  • Mix the cornstarch with water and stir into the berry mixture, allowing it to thicken. Once done, set the sauce aside to cool.

Preparing Cheesecake Filling

  • In a mixing bowl, beat the softened cream cheese with the additional sugar, egg yolk, and vanilla until smooth and creamy.

Making Cupcake Batter

  • Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, beat the softened unsalted butter with granulated sugar until fluffy. Incorporate the eggs one at a time, then blend in the sour cream, milk, and vanilla extract.
