Ingredients
  

For the meatloaf

  • 1 tablespoon olive oil For sautéing the vegetables.

  • 1/2 teaspoon black pepper Adds subtle heat.
  • 1 teaspoon dried parsley For earthiness and color.
  • 2 lb ground beef (80/20) Perfect for a hearty meatloaf.

For the glaze

  • 3/4 cup ketchup Sweet and tangy.
  • 2 tablespoons brown sugar Adds sweetness.
  • 1 tablespoon Dijon mustard For depth of flavor.
  • 1 teaspoon Worcestershire sauce (additional) Enhances the glaze.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Line a rimmed baking sheet with foil or parchment, then lightly grease it.
  • In a skillet over medium heat, warm the olive oil. Add the diced onion and cook for 4-5 minutes until softened. Add garlic and cook for another 30 seconds until fragrant. Let the mixture cool slightly.
  • In a large bowl, mix together the crushed Ritz crackers, milk, eggs, Worcestershire sauce, salt, pepper, and dried parsley. Let it sit for about 3 minutes.
  • Gently add the ground beef and the cooled onion-garlic mixture to the bowl. Mix everything with your hands until just combined.
  • Shape the mixture into a loaf and place it onto the prepared baking sheet.

Cooking

  • Bake for 35 minutes, then brush the glaze generously over the meatloaf.
  • Return to the oven for an additional 20-25 minutes, or until the internal temperature reaches 160°F (70°C).
  • Remove from the oven and let the meatloaf rest for about 10-15 minutes before slicing.

Notes

For an extra kick, mix in some chopped jalapeños or bell peppers. Add grated cheese to the mixture for a cheesy twist. For a smoky flavor, use smoked paprika instead of black pepper.
