  • 2 tablespoons chopped fresh parsley Fresh garnish.

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C) and line a large rimmed sheet pan with parchment paper.
  • In a large bowl, combine sweet potato cubes with olive oil, salt, black pepper, smoked paprika, and ground cumin, tossing to coat.
  • Spread the sweet potato mixture on the baking sheet in a single layer.

Roasting

  • Roast for about 20 minutes or until the bottoms are just beginning to brown.
  • While the potatoes are roasting, whisk together maple syrup, apple cider vinegar, ground cinnamon, and cayenne pepper to make the maple glaze.
  • After 20 minutes, flip the potatoes, drizzle the maple glaze over them, and toss gently to coat.
  • Return to the oven for an additional 5-7 minutes until tender and caramelized.

Serving

  • Serve with chopped fresh parsley sprinkled on top.

Notes

For added depth of flavor, consider adding a squeeze of fresh lemon juice before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days. For variations, experiment with different spices or add in other veggies like carrots or butternut squash.
