Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large oven-safe skillet, heat a small dash of oil over medium heat.
  • Add the sausages to the skillet and cook until golden brown, about 8 minutes; remove and set aside.
  • In the same skillet, add the sliced onions and cook for 5 minutes until they soften.
  • Stir in the minced garlic and cook for 1-2 minutes until fragrant.

Cooking

  • Pour in the vegetable broth, then add mustard, thyme, bay leaves, salt, and pepper; bring to a simmer.
  • Nestle the browned sausages back into the skillet, ensuring they are surrounded by gravy.
  • Transfer the skillet to the oven and roast for 25-30 minutes, basting halfway with the gravy.
  • Remove the bay leaves before serving.
  • Serve with the rich gravy drizzled over the sausages.

Notes

Consider adding a splash of cream to the gravy for richness. Serve over creamy mashed potatoes or crusty bread to soak up the gravy.
