Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Grease a 9 by 13-inch baking dish with butter or cooking spray.
  • In a large pot of salted boiling water, cook the rotini pasta until just al dente, about 7-9 minutes. Reserve 1 cup of pasta water before draining.

Mixing and Baking

  • In a large mixing bowl, combine cooked pasta, shredded chicken, Alfredo sauce, garlic Parmesan sauce, 1 cup mozzarella, 1/4 cup Parmesan, salt, black pepper, and red pepper flakes if using. Stir until evenly coated.
  • Transfer the pasta mixture to the greased baking dish. If thick, add reserved pasta water for a smoother consistency. Top with remaining mozzarella and Parmesan.
  • Cover the dish with foil and bake for 20-25 minutes until bubbly and hot.
  • Uncover and broil for 2-3 minutes until the cheese is golden and crispy.

Serving

  • Let it rest for 5 minutes before serving. Garnish with chopped parsley.

Notes

For extra flavor, add sautéed mushrooms or spinach. Use leftover rotisserie chicken for convenience. Substitute pasta shapes as desired. For a crunchy topping, sprinkle breadcrumbs mixed with melted butter over the cheese.
