Preparation

  • Pat the beef cubes dry and season with salt and pepper. Heat the vegetable oil in a large Dutch oven over medium-high heat. Sear the beef in batches until browned on all sides, then transfer to a plate.
  • Reduce heat to medium, add the diced onion, and cook until translucent, about 5 minutes. Stir occasionally, then add the minced garlic and cook for another 30 seconds.
  • Sprinkle flour over the onions and stir for 1 minute. Next, add the tomato paste and continue to stir for another minute.

Cooking

  • Pour in the beef broth, scraping the bottom of the pot. Add Worcestershire sauce, thyme, bay leaf, and seared beef with all its juices. Bring the mixture to a boil, then cover and simmer on low for 1.5 to 2 hours.
  • Stir in the sliced mushrooms and cook for another 30 minutes. Remove the bay leaf and thyme stems before serving.

Serving

  • Adjust the seasoning with salt and pepper as needed, and garnish with fresh parsley if desired. Serve hot with mashed potatoes, rice, or crusty bread.

Notes

Consider marinating the beef in Worcestershire sauce overnight for additional flavor. This stew pairs well with various accompaniments, making it excellent for family gatherings.
